In my humble opinion, summer just isn’t summer without pasta salad. It rounds out a barbecue, makes a simple lunch, and can become dinner when it’s just too hot for a hot meal. That’s why it’s essential to have it around when you’re on vacation and living the easy, breezy summer rental life.

Make a big bowl of this salad and keep it in your fridge throughout your vacation. Pull it out when you fire up some burgers on the grill, pack some up for lunch when you head to the beach, or simply dig into it for a midday snack after swimming and getting the best kind of tired

Easy Pesto Tortellini Pasta Salad

This Easy Pesto Tortellini Pasta Salad is ready in about 10 minutes! Made with just basic 5 ingredients you probably have in the kitchen right now! This is the perfect side dish for Summer parties, picnics, or potlucks!!!

Ingredients

  1. 1 cup pesto
  2. 1 and 1/2 cups cherry tomatoes, sliced in half
  3. (1) 12 ounce container marinated mozzarella balls, drained
  4. 1/4 cup red onion, diced
  5. (1) 20 ounce bag cheese tortellini

Instructions

  1. Bring a large pot of salted water to boil. Add tortellini and cook for 1 and 1/2 minutes. Do not over cook!
  2. Drain and rinse under cold water until cool.
  3. Place tortellini in a large serving bowl. Add in pesto, tomatoes, cheese, and onion. Toss well to coat.
  4. Serve at once, or cover and place in the fridge for up to 5 days.

Notes

Store the salad in an airtight container in the refrigerator for up to 3 days. Let sit at room temperature 30 minutes to take the chill off before serving.
